There's a new Return of the King Movie-Goers' Guide at The Encyclopedia of Arda. It explains the differences between the book and the movie without joining in the "which is better" arguments. It also explains who the minor characters are and what happens to various characters after the move ends. There are also excellent guides for Fellowship of the Ring and The Two Towers. Worth a look.
